This white wine vinegar is made from organically grown Sauvignon Blanc DOCG grapes from Scandiano in Emilia Romagna, Italy. The soft, dry wine makes a bittersweet vinegar, to which a touch of grape must is added, producing a sweet and astringent condiment.
